Perlagrigia con Tartufo is a semi soft, pasterurized, cow's milk cheese with truffles, from Italy.
It is an exotic cheese that has been aged in ash to preserve it, according to the Venetian farmer's tradition. These ash ingredients include nutmeg, cloves, coriander, cinnamon, licorice, and fennel. The cheese itself has black truffle shavings in it, which give it an aromatic flavor and taste, and the rind is aromatized with truffle oil.
